Zucchini Salsa Recipe – Thanks Carmen!

I got this zucchini salsa recipe from a friend from zucchini salsa work, so thanks Carmen!  This is an awesome treat late summer, and it lasts and lasts because it is canned. Generally, I make this in two batches at a time and yields around 4 large mason jars per batch.  It goes quickly so I like to have some after the first week.

I love to give this to special friends at Christmas time too.  So if you get this from me at this time, know that I really care!

Be aware before you start making this recipe that this is a two day recipe, where you will let the vegetables sit overnight, then drain in the morning and add the rest of the ingredients in the morning.  Alternatively, you could start early in the morning, let it sit for the day, and then complete in the evening. Caramel Popcorn Recipe

This caramel popcorn recipe is so easy to make, and doesn’t last long when sharing.  I like to give this out in a sealed bag or container when I am handing out my Christmas baking.  This is a hit when it goes to work with me to.  Always seems to be a favourite!



  • 1 cup butter
  • 2 cups brown sugar
  • ½ cup corn syrup
  • 1 tsp salt
  • ½ tsp baking soda
  • 1 tsp vanilla
  • 1 cup raw popcorn

Chocolate Peanut Butter Cheesecake Recipe

This cheesecake is so mouthwatering, with chocolate fulfillment and peanut butter makes for a combination of deliciousness…..Give it a try and let me know what you think.

The only bad part of making this is that it is supposed to sit for 4 hours in the freezer before serving it.  Thank goodness there are bowls and spoons to lick!  It seems complicated the first couple of times making it, but hopefully my directions and pictures will help you make sense of it.


  • 1 cup oreo crumbs
  • 3 Tbsp margarine
  • 1 package cream cheese
  • 1/2 cup sugar
  • 1/2 cup peanut butter
  • 2 tsp vanilla
  • 1 1/2 cups cool whip
  • 2 squares semi-sweet baker’s chocolate (2 oz)

Baileys Ice Cream Recipe – Yum!

I was at a New Year’s party last year and they were serving baileys ice cream shooters and I just had to have the recipe.  When I make it, I don’t have them as shooters though….I’m kinda bad.  I make it and put it into a container so after it freezes I can scoop it into an ice cream cup and enjoy like nobody’s business!

I’m sure there’s a moderation factor here, but it’s sooo delicious, I don’t think it matters.  Maybe just don’t drive if you eat the whole container.

Just a quick warning…this is highly addictive and also probably shouldn’t be shared with the little ones!


  • 1 vanilla pudding mix
  • 1 cup milk
  • 1/2 cup baileys
  • 1/4 cup vodka
  • 1/2 container cool whip
  • 1/2 cup oreo crumbs

Marshmallow Salad Recipe – I know it as Tomorrow Salad

This salad is great for family get togethers and needs to be made one day in advance.  The marshmallows and fruit are a favourable, tangy combination of deliciousness (my opinion, not my husband’s!)  This recipe is so easy and quick to make, you will not be disappointed (unless you are my husband).  A big thank you to my sister-in-law Natasha for this one!

  • “smaller” bag of mini marshmallows
  • 1 small can of mandarin orange segments
  • 1 small can of pineapple tidbits
  • 2 cups sour cream (sounds healthy now!)

How to make homemade chocolate chip cookies

My kids are so often asking for these homemade chocolate chip cookies, and they are so easy.  If they want them, they help make them with me.  And so of course, they get to help lick the batter from the spoons and bowl!

I am going to show you in detail how easy these chocolate chip cookies are to make, and I’m sure they will be a hit in your house too.


  • 1 cup margarinechocolate chip cookies
  • 1 1/2 cups brown sugar
  • 2 eggs, beaten
  • 2 tsp vanilla
  • 2 cups flour

Layered Lettuce Salad – this is one from MY mom!

This layered lettuce salad is one that my mom always makes for family gatherings or big meals.  It is always a hit and I would like to share it with you…as well as make it for myself.

  • 1 cup sour cream
  • 1 cup mayonnaise
  • 2 Tbsp sugar
  • 2-3 green onions, sliced
  • 1/2 cup frozen peas

Cream Cheese Nacho Dip – Simple and Delicious

This nacho dip recipe is so easy, that is so quick and easy to make, and well worth the fresh ingredients.  This is great for snacking, getting together with friends, or sharing at work.  Either way, make sure you have the recipe written out to share, because anyone you share with is going to want more!

Ingredientsnacho dip

  • 500 ml sour cream
  • 1 package cream cheese (8 oz)
  • 1 package taco mix (1/3 cup)
  • 1 tomato, chopped
  • 2 green onions, chopped
  • 1 cup lettuce, shredded
  • 1/2 cup cheese, shredded (I like to use marble)
